It is the sequence Catherine uses to taste each blend she composes, a multisensory way of experiencing the tea that moves from first breath to last trace. Flavor lives inside body and finish, arriving on the palate at first sip and lingering long after.

Breathe it in before the first sip. Aroma sets the expectation for what the palate is about to meet and often carries more of the tea than the tongue alone will register.
