From Our Tea Sommelier

Turn-down service is one of my favorite hotel rituals. Someone comes in, pulls back the covers, and the room becomes a place for rest. I wanted this blend to feel like that. Chamomile, lavender, linden combine to make something soft, floral, and completely unhurried. This blend is a signal to your body that the day is done and everything else can wait until morning.

The Four Steps to Tasting Like a Sommelier

Behind the Blend

Every Forgrave blend is designed to be read the same way: aroma, color, body, and finish. It is the sequence Catherine uses to taste each blend she composes, a multisensory way of experiencing the tea that moves from first breath to last trace. Flavor lives inside body and finish, arriving on the palate at first sip and lingering long after.

Aroma
Step One
Aroma
Breathe it in before the first sip. Aroma sets the expectation for what the palate is about to meet and often carries more of the tea than the tongue alone will register.
Lavender arrives first and cool, honeyed chamomile rising through the middle, linden blossom soft and sweet at the base.
Color
Step Two
Color
Tilt the cup toward the light and study the liquor, the color of the brewed tea. Each tea has a distinct and expected hue, and its clarity is the first signal of a leaf steeped properly.
A pale violet blue drawn from the butterfly pea flower, deepening the longer it steeps.
Body
Step Three
Body
Take a slow sip and let it rest across the whole palate. This is where flavor first arrives, alongside the weight and texture of the tea on the tongue.
Light and rounded, chamomile filling the front while lavender cools the middle and lemon balm settles clean beneath.
Finish
Step Four
Finish
Breathe out gently after you swallow and notice what lingers. Much of flavor is carried on the exhale as aroma returns through the nose, so the finish is where a tea reveals its final notes.
Lavender lingers softest, chamomile sweetness holding quietly to the close.
