The Four Steps to Tasting Like a Sommelier

Behind the Blend

Every Forgrave blend is designed to be read the same way: aroma, color, body, and finish. It is the sequence Catherine uses to taste each blend she composes, a multisensory way of experiencing the tea that moves from first breath to last trace. Flavor lives inside body and finish, arriving on the palate at first sip and lingering long after.

Breathe it in before the first sip. Aroma sets the expectation for what the palate is about to meet and often carries more of the tea than the tongue alone will register.
The initial citrus hits first, mellower lemongrass through the heart, black tea malt at the base.
Color

Color
Tilt the cup toward the light and study the liquor, the color of the brewed tea. Each tea has a distinct and expected hue, and its clarity is the first signal of a leaf steeped properly.
A warm orangey brown with a touch of gold, lighter and brighter than a classic Earl Grey.

Body
Take a slow sip and let it rest across the whole palate. This is where flavor first arrives, alongside the weight and texture of the tea on the tongue.
Lighter than a traditional Earl Grey, the extra citrus lifting the tea forward while black tea malt keeps it anchored underneath.

Breathe out gently after you swallow and notice what lingers. Much of flavor is carried on the exhale as aroma returns through the nose, so the finish is where a tea reveals its final notes.
